A real tree-ripened apricot is a different fruit from the hard ones in stores — honeyed, perfumed, and fragile, which is exactly why stores can't sell them. The Falkners pick these the day before pickup and not an hour earlier.

A 15 lb case is about 90–110 apricots. Eat what you can in three days, halve and freeze or jam the rest — Marta's jam ratio is in the confirmation email.
